Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 medium onion, finely chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 cup French onion soup (store-bought or homemade)
  • 1/2 cup shredded Gruyère or Swiss cheese

Instructions

  1. Make the Meatballs: Preheat the oven to 375°F (190°C). In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic powder, thyme, salt, and pepper. Roll into 1-inch meatballs.
  2. Cook the Onions: Heat olive oil in a pan over medium heat. Add the chopped onions and cook until caramelized, about 10 minutes.
  3. Bake the Meatballs: Arrange the meatballs on a baking sheet and bake for 15-20 minutes, until cooked through.
  4. Simmer in Soup: In a large pan, pour in the French onion soup. Add the meatballs and simmer for an additional 5 minutes.
  5. Top with Cheese: Sprinkle shredded Gruyère or Swiss cheese over the meatballs and soup, then broil for 1-2 minutes until the cheese is melted and bubbly.
