- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 medium onion, chopped
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 1 ½ cups frozen peas and carrots (optional)
- 1 cup shredded cheddar cheese (optional, for topping)
Instructions
- Spray the slow cooker insert with cooking spray or lightly grease it.
- Place the chicken breasts at the bottom of the slow cooker.
- In a medium bowl, combine the cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Pour this mixture over the chicken.
- Add the uncooked rice on top of the soup mixture. If using, add the frozen peas and carrots to the slow cooker.
- Cover and cook on low for 6-7 hours, or until the chicken is cooked through and the rice is tender. You can also cook it on high for 3-4 hours.
- About 30 minutes before serving, check the rice for tenderness and stir. Shred the chicken with two forks and stir it back into the rice mixture.
- (Optional) Top with shredded cheddar cheese and let it melt before serving.
Notes
- You can use chicken thighs instead of breasts for more flavor and juiciness.
- If you prefer a more flavorful base, add some herbs like thyme or rosemary.
- For a creamier texture, you can stir in a little sour cream or cream cheese during the last 30 minutes of cooking.
