Description

Pollo Loco Chicken brings the flavors of Mexican-inspired grilled chicken right to your kitchen. Marinated in a tangy citrus and spice blend, then grilled to perfection, this juicy chicken is full of flavor. It’s perfect for tacos, burritos, or served with rice and beans!

 


Ingredients

  1. 4 chicken thighs (bone-in, skinless)
  2. 1/4 cup orange juice
  3. 2 tbsp lime juice
  4. 2 tbsp olive oil
  5. 2 garlic cloves (minced)
  6. 1 tsp cumin
  7. 1 tsp chili powder
  8. 1/2 tsp paprika
  9. 1/2 tsp oregano
  10. Salt and pepper (to taste)
  11. Fresh cilantro (for garnish)

Instructions

  • In a bowl, mix together the orange juice, lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper.
  • Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and marinate for at least 1 hour (or up to overnight in the fridge).
  • Preheat your grill or grill pan over medium heat.
  • Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes before slicing. Garnish with fresh cilantro and serve.

Notes

  • If you don’t have a grill, you can also cook the chicken in a skillet over medium heat.
  • This chicken works great for tacos, salads, or served with a side of rice and beans.
  • For a smoky flavor, add a bit of chipotle powder or use smoked paprika.
