Pollo Loco Chicken brings the flavors of Mexican-inspired grilled chicken right to your kitchen. Marinated in a tangy citrus and spice blend, then grilled to perfection, this juicy chicken is full of flavor. It’s perfect for tacos, burritos, or served with rice and beans!

- 4 chicken thighs (bone-in, skinless)
- 1/4 cup orange juice
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper (to taste)
- Fresh cilantro (for garnish)
Instructions
- In a bowl, mix together the orange juice, lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper.
- Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and marinate for at least 1 hour (or up to overnight in the fridge).
- Preheat your grill or grill pan over medium heat.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing. Garnish with fresh cilantro and serve.
Notes
- If you don’t have a grill, you can also cook the chicken in a skillet over medium heat.
- This chicken works great for tacos, salads, or served with a side of rice and beans.
- For a smoky flavor, add a bit of chipotle powder or use smoked paprika.
