  • 1 cup fresh spinach (chopped)
  • 1 garlic clove (minced)
  • 1/2 cup ricotta cheese
  • 1/4 cup Parmesan cheese (grated)
  • Salt and pepper to taste

For the Sauce:

  • 4 tbsp unsalted butter
  • 1 garlic clove (smashed)
  • Fresh sage leaves or parsley for garnish

Instructions

  1. Make the Dough: Combine flour, eggs, spinach purée, and salt. Knead until smooth, wrap in plastic, and let rest for 30 minutes.
  2. Prepare the Filling: Heat olive oil in a skillet. Sauté mushrooms, spinach, and garlic until tender. Let cool, then mix with ricotta, Parmesan, salt, and pepper.
  3. Assemble Ravioli: Roll out the dough thinly. Place small spoonfuls of filling on one sheet, cover with another sheet, press gently, and cut into ravioli shapes.
  4. Cook Ravioli: Boil the ravioli in salted water for 3-4 minutes or until they float.
  5. Prepare Sauce: Melt butter in a skillet, add garlic and sage, and cook until fragrant. Drizzle over the ravioli.
  6. Serve Hot: Garnish with fresh herbs and a sprinkle of Parmesan.
