Instructions
- Make the Dough: Combine flour, eggs, spinach purée, and salt. Knead until smooth, wrap in plastic, and let rest for 30 minutes.
- Prepare the Filling: Heat olive oil in a skillet. Sauté mushrooms, spinach, and garlic until tender. Let cool, then mix with ricotta, Parmesan, salt, and pepper.
- Assemble Ravioli: Roll out the dough thinly. Place small spoonfuls of filling on one sheet, cover with another sheet, press gently, and cut into ravioli shapes.
- Cook Ravioli: Boil the ravioli in salted water for 3-4 minutes or until they float.
- Prepare Sauce: Melt butter in a skillet, add garlic and sage, and cook until fragrant. Drizzle over the ravioli.
- Serve Hot: Garnish with fresh herbs and a sprinkle of Parmesan.
