- 4 filet mignon steaks (6–8 oz each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, crushed
- 2 sprigs fresh rosemary or thyme (optional)
- Salt and freshly ground black pepper, to taste
Instructions
- Prep the steaks: Remove the filet mignon steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels to ensure a good sear.
- Season the steaks: Generously season the steaks with salt and freshly ground black pepper on both sides.
- Heat the pan: In a large skillet (preferably cast-iron), heat olive oil over medium-high heat until hot and shimmering.
- Sear the steaks: Add the steaks to the hot pan and cook for about 4-5 minutes on the first side until a rich, brown crust forms. Turn the steaks over and reduce the heat to medium-low.
- Add butter and aromatics: Add butter, crushed garlic, and rosemary (or thyme) to the pan. As the butter melts, spoon it over the steaks repeatedly to baste them. Continue cooking the steaks for another 4-5 minutes for medium-rare, or longer for desired doneness.
- Check the internal temperature: For a perfect medium-rare, the internal temperature should reach 130°F (54°C). For medium, aim for 140°F (60°C), and for well-done, cook to 160°F (71°C).
- Rest the steaks: Remove the steaks from the pan and let them rest on a plate for about 5 minutes before serving to allow the juices to redistribute.
- Serve: Serve the filet mignon with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
Notes
- You can finish the steaks in the oven if you prefer a more even cook. After searing both sides, transfer the skillet to a preheated oven at 400°F (200°C) for about 5-10 minutes, depending on your desired doneness.
- For extra flavor, consider adding a splash of red wine or beef broth to the pan after removing the steaks and reducing it for a quick pan sauce.
