Description

This refreshing White Bean Salad is a quick, nutritious dish packed with protein and fiber. With its simple ingredients, zesty dressing, and vibrant veggies, it’s a perfect side or light meal for any occasion.

 


Ingredients

  1. 2 cans (15 oz each) white beans, drained and rinsed
  2. 1/2 cup red onion, finely chopped
  3. 1 cup cucumber, diced
  4. 1/2 cup cherry tomatoes, halved
  5. 1/4 cup fresh parsley, chopped
  6. 3 tbsp olive oil
  7. 1 tbsp lemon juice
  8. 1 tbsp red wine vinegar
  9. Salt and pepper to taste

Instructions

  • In a large bowl, combine the white beans, red onion, cucumber, tomatoes, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, salt, and pepper.
  • Pour the dressing over the bean mixture and toss gently to combine.
  • Chill in the fridge for at least 30 minutes before serving to allow the flavors to meld.
